In the heart of the Vimeu region, the Moulin de Visse, a historical monument, has been producing flour for many bakeries in the area for nearly five centuries. Stopped at the end of the 70’s, I wish that it will produce again a quality flour from old varieties of wheat that will be harvested by partner farmers. A bakery installed in the buildings next to the mill will gather around an authentic wood-fired oven, a baker and enthusiasts of a bread-making process respectful of the living.
This is an ambitious project that is at the heart of your initiative to enhance our heritage, it will create qualified local jobs.
Also, this project will require aids and I wish, through the importance of your structure, to sensitize all the generations and the wills to succeed.
All the population of the surrounding countryside and the cities and the tourists more and more numerous to discover the Hauts-de-France, the Bay of the Somme as well as the back country and its patrimonial wealth.
The relocation of an organic flour production on old millstones and the production in situ of sourdough bread in a traditional oven are the basis of a food that is respectful for the one who produces it and the one who eats it. It is the result of a reflection to be carried out with farmers who respect the soil and who value their work.
The baker will also explain the interest of sourdough bread in a soft diet for our body.
This project will highlight the quality of the cereals produced in the Hauts de France, the quality of the traditional work of milling and baking.
I also hope that it will serve as a place of learning and enjoyment for the most passionate and the most curious tourists of its rich historical past.
