Over the last ten years, a large number of breweries have been created all over France. The Lille metropolis is obviously concerned by this revival of craft beer and now has nearly forty breweries on its territory.
Happy Drêche was born in 2018 from a simple observation: the manufacture of beer generates a co-product (the draff) which is unfortunately not or little valorized in urban environment. However, the spent grain, residue of malted barley having infused in water, is a very interesting product! Indeed, after its use in the manufacture of beer, it remains a very important concentration of fiber (70%) and protein (20%).
We therefore wanted to find a solution to this waste of resources on the MEL territory and developed products to propose a recovery of spent grains in human food: malt nuggets! A healthy and tasty snack that ideally complements our current consumption patterns that are low in fiber and include little plant protein.
Surrounded by our numerous local partners (brewers, distributors, local authorities…) we are working to develop new products and services in order to offer a sustainable and quality food, distributed in short circuit.
At Happy Drêche, we propose a range of sweet and savoury products, healthy, greedy, and able to create employment locally and sustainably.
This project targets the entire brewing ecosystem of the Lille metropolis as well as the inhabitants of the Hauts-de-France region.
How will your project help promote the gastronomy of the Hauts-de-France region?
Our current consumption patterns offer little room for fiber and plant proteins… But these consumption patterns are constantly evolving, and even more so today following the health crisis. There is now a growing demand in the region for healthy, local products that add value to their environment.
At Happy Drêche, we wish to participate in the creation of a better quality and sustainable food offer on the regional territory by integrating the draff and its nutritional qualities. That’s why we are constantly working to improve our products (both on their taste and nutritional quality) and to propose new recipes to meet consumers’ expectations. All our products are the result of a collective work with our local partners, from the supply of raw materials, through the manufacturing (partnership with professional integration structures) to the sale to our distributors.
